Tabouli Recipe

Tabouli

or something like it.

Drain

 2/3 cups of cracked bulgur wheat
pour hot water or broth over wheat and set aside.

Simmer

 1/3 cup lentils 
in water or broth until tender. Immediately remove from heat and rinse with cold water and set aside.

Mix together in a large bowl

 1 1/2 cups chick peas or 1 can
 1/3 cup chopped green onions
 1 1/2 cups chopped tomatoes
 1 1/2 cup chopped parsley
 1 cup crumbled feta cheese
 3/4 cup extra virgin olive oil
 1 cup fresh lemon juice (or to taste)
 Salt and pepper to taste

Mix in bulgur wheat and lentils.

Keep in fridge. Add more liquid whenever necessary.
